Food systems design specialist, now retired. Worked for the Walt Disney Co. for 21 years designing food service systems that can handle 14,000 meals/hour, catering to a wide range of palates and wallets. My team designed and opened for operation Disney's California Adventure and Hong Kong Disneyland, including hotels.
My last 5 years I worked as a corporate head of target group management HoReCa (hotels, restaurants, catering/canteens) for http://www.metrogroup.de/en/metro-cash-and-carry, as the senior strategist reporting at board level for food wholesale in 30 countries, over 700 locations at the time. My segment generated total sales of Euro 13.5 billion.
I have since my retirement taken MOOCs at Columbia, M.I.T., John Hopkins, Duke, UC Illinois, and others on topics related to the sustainability of food systems, to sustainability issues in general. I work pro bono for non-profit ventures.
